Cocktail pairing is what makes this cozy gem stand out in the gastronomical crowd. Co-owner and internationally renowned bartender Hasse Bank Johansen is the creative director behind the bar, which presents itself as a Shakespearean stage, in the middle of the main restaurant. Chef Christian Bøjlund is in charge of creating the courses, focusing on fresh seasonal produce, and prioritising locally bred/grown ingredients to create pure taste experiences with the intention of optimally complimenting the cocktail menu. The building was built as an apothecary in 1899, and has functioned as such until a few years before St Paul’s Apothek opened its doors in 2012. It is situated smack dap on the central street: ‘Jægergårdsgade’ of the very hip Frederiksbjerg district, St Paul’s Apothek certainly plays its part, in making Denmark’s second-largest city bustling with life.
